Resumen
La nutrición y la alimentación son fenómenos multidimensionales que trascienden el campo de la salud, vinculándose profundamente con dimensiones biológicas, ecológicas, sociales y políticas. Sin embargo, identificamos limitaciones significativas en los enfoques tradicionales, que fragmentan la nutrición. Argumentamos que superar ello requiere un compromiso con estrategias integradoras y críticas que promuevan la justicia social y ambiental. En este trabajo, analizamos y reflexionamos críticamente sobre la alimentación y nutrición como fenómenos complejos, proponiendo una nutrición crítica como marco integral para los múltiples e interconectados desafíos contemporáneos (policrisis). El enfoque de la “nutrición crítica” está basado en la complejidad, promoviendo una mirada transdisciplinaria que conecta saberes diversos, incluyendo perspectivas socioecológicas y de género. Asimismo, identifica potenciales avenidas para llevarla a cabo, incluyendo la soberanía alimentaria y los ecofeminismos. Una nutrición crítica propone un conocimiento emancipador y reflexivo, capaz de responder a la complejidad de los sistemas alimentarios y nutricionales en el Antropoceno.
